Easy BBQ Chicken Thighs on the Pellet Grill

This recipe adapts to the easy delicious chicken recipe by Heath Riles Classic BBQ Chicken on a Pellet Grill. Heath’s line of rubs is among some of my favorites. I own and use every rub and sauce he sells. Along with several others, I keep coming back to him time and time again.

This easy BBQ chicken thighs on the pellet grill recipe adapt to the easy delicious chicken recipe by Heath Riles Classic BBQ Chicken on a Pellet Grill. Heath’s line of rubs is among some of my favorites. I own and use every rub and sauce he sells. Along with several others, I keep coming back to him time and time again.  

In this recipe, by using boneless, skinless chicken thighs, you get terrific dark meat with a smoky interior and caramelized BBQ exterior. I love using thighs for the dark meat and buy them skinless and boneless, so I don’t need to cut around the bone when eating dinner. 

Even though this chicken thigh recipe was written for use on a pellet grill, you can smoke the chicken in any smoker for the first part. When it’s time to remove the meat to caramelize the barbeque sauce, you can use a gas grill or anything that will get hot enough.

BBQ Chicken Recipe Instructions

Step 1: Remove chicken from packaging and lay them out on a plate or pan. then place in the fridge to dry.

Step 2: Season all sides well with the Heath Riles Everyday Rub and Heath Riles Honey Rub.

Step 3: Set your pellet grill or smoker to 250ºF.

Step 4: Smoke the chicken thighs for about 45 minutes, flipping halfway.

Step 5: Take the thighs off of the grill once their internal temperature reaches about 140ºF.

Step 6: Increase your pellet grill temperature to 450-500ºF.

Step 7: Baste the chicken with your preferred BBQ sauce and return them to the grill.

Step 8: Grill the chicken for 5-7 minutes per side to caramelize the sauce.

Step 9: Remove from the grill once the chicken reaches 165°F and serve warm.

  • 8 oz BBQ sauce

    This will over cook them and render the chicken dry and tough. You need to crank up the heat while the temperature is still 145 and the stop when it hits 165

    1. Thank you for catching the mistake! You’re completely correct so the recipe will change so the chicken comes off at 165 degrees F and not after.
